(You may use any spice you prefer from the recommended spice list. Season to taste.)
Cooking Instructions
- Cook the rice according to the package instructions.
- While the rice is cooking, prepare the spinach by sautéing it.
- Heat a large skillet over medium heat and add the coconut oil. Swirl to coat the skillet, then add the fresh spinach.
- Sauté the spinach for a few minutes until wilted. Add a pinch of salt, then remove the spinach to a clean bowl.
- Chop the onion and brown it in the same skillet.
- Add the beef mince to the skillet and cook until fully browned.
- Add the chilli, garlic, and soy sauce. Stir and cook for about one minute.
- Prepare the fresh vegetables. Peel and grate the carrot using a coarse grater. Thinly slice the cucumber and spring onions.
- Cook the egg in a separate pan to your preference.
- Build the bowl by adding the rice first, followed by spinach, seasoned beef mince, cucumber, grated carrot, cooked egg, and kimchi.
- Sprinkle with sliced spring onions and sesame seeds before serving.

- Kimchi adds flavour, crunch, and a fermented food source that pairs beautifully with the beef.
- Fresh vegetables add texture and contrast to the warm rice and beef.
- For extra heat, add additional chilli or a small amount of gochujang if it fits your meal plan.
