Preparation Method

  1. Toast the whole wheat bread.
  2. Fry the eggs to your preference in a pan over medium heat using non-stick spray. Season with salt and pepper.
  3. Slice the tomato into rounds and fry in a pan with non-stick spray over medium heat. Season with salt and pepper.
  4. Cook the tomatoes until caramelised on both sides.
  5. Mash and season the avocado to taste.
  6. Layer the toast with baby spinach, mashed avocado, and fried tomatoes.
  7. Place the eggs on top and enjoy.
