Japanese Ginger Carrot Dressing

A light blended dressing with carrot, ginger, rice vinegar, broth, soy sauce, and sesame oil.

Ingredients

  • ½ cup grated carrot, about 60g
  • ¼ cup rice vinegar
  • ¼ cup low-sodium chicken or vegetable broth
  • 1 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • 1 tsp sesame oil
  • Zero-kcal sweetener, to taste, approximately 1 to 2 tsp sugar equivalent

Method

  1. Add all ingredients to a blender.
  2. Blend until completely smooth.
  3. Chill in the fridge before serving.
