Lemon & Herb Chicken Kebabs
These Mediterranean-inspired chicken kebabs are simple, flavourful, and naturally high in protein. Great for entertaining, braais, meal prep, or healthy weeknight dinners.
Ingredients
- 600g chicken breast, cubed
- Juice of 1 lemon
- 2 cloves garlic, crushed
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
Optional Vegetables
- Red onion chunks
- Bell pepper chunks
- Baby marrow (zucchini) slices
Instructions
- Combine the lemon juice, garlic, oregano, thyme, paprika, salt, and pepper in a bowl.
- Add the chicken and toss until evenly coated.
- Cover and marinate for at least 30 minutes.
- Thread the chicken onto skewers, alternating with vegetables if desired.
- Grill, braai, bake at 200°C, or air fry at 190°C.
- Cook for 12–15 minutes, turning halfway through.
- Cook until the chicken reaches an internal temperature of 75°C.
