Lemon & Herb Chicken Kebabs

These Mediterranean-inspired chicken kebabs are simple, flavourful, and naturally high in protein. Great for entertaining, braais, meal prep, or healthy weeknight dinners.

Ingredients

  • 600g chicken breast, cubed
  • Juice of 1 lemon
  • 2 cloves garlic, crushed
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper

Optional Vegetables

  • Red onion chunks
  • Bell pepper chunks
  • Baby marrow (zucchini) slices

Instructions

  1. Combine the lemon juice, garlic, oregano, thyme, paprika, salt, and pepper in a bowl.
  2. Add the chicken and toss until evenly coated.
  3. Cover and marinate for at least 30 minutes.
  4. Thread the chicken onto skewers, alternating with vegetables if desired.
  5. Grill, braai, bake at 200°C, or air fry at 190°C.
  6. Cook for 12–15 minutes, turning halfway through.
  7. Cook until the chicken reaches an internal temperature of 75°C.
