Cooking Instructions

  1. Slice the bell peppers into strips. Chunky chop the mushrooms and dice the onions.
  2. In a pan over medium heat, sauté the vegetables using a little water. Season to taste.
  3. Once the vegetables are cooked through and browned, remove them from the pan.
  4. Grate your portion of potato as you would cheese.
  5. Place the grated potato into a clean tea towel and squeeze out as much water as possible.
  6. In a pan over medium heat, add the coconut oil and begin browning the grated potato.
  7. Mix the eggs in a bowl with salt and pepper.
  8. Pour the egg mixture over the potatoes in the pan. Make sure the potato and eggs mix completely and are evenly spread throughout the pan.
  9. Cover and cook until the omelette is set and cooked through.
  10. Place the vegetables in the centre of the omelette, garnish with parsley, and serve.

  • Removing excess moisture from the potato helps it brown beautifully and prevents a soggy omelette.
  • Cook the vegetables separately first to maximise flavour and avoid excess water in the omelette.
  • Add spinach at the very end of sautéing to preserve colour and texture.
