Cooking Instructions
- Slice the bell peppers into strips. Chunky chop the mushrooms and dice the onions.
- In a pan over medium heat, sauté the vegetables using a little water. Season to taste.
- Once the vegetables are cooked through and browned, remove them from the pan.
- Grate your portion of potato as you would cheese.
- Place the grated potato into a clean tea towel and squeeze out as much water as possible.
- In a pan over medium heat, add the coconut oil and begin browning the grated potato.
- Mix the eggs in a bowl with salt and pepper.
- Pour the egg mixture over the potatoes in the pan. Make sure the potato and eggs mix completely and are evenly spread throughout the pan.
- Cover and cook until the omelette is set and cooked through.
- Place the vegetables in the centre of the omelette, garnish with parsley, and serve.
