Roasted Broccoli - Oil Free

A simple oil-free roasted broccoli recipe with bold seasoning, crispy edges, and a tender centre.

Ingredients

  • 500g broccoli florets
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp water
  • 1 tbsp fresh lemon juice, optional

Instructions

  1. Preheat the oven to 220°C.
  2. Line a baking tray with baking paper.
  3. Place the broccoli florets in a large mixing bowl.
  4. Add the garlic powder, onion powder, smoked paprika, salt, and black pepper.
  5. Drizzle over the water and toss until evenly coated.
  6. Spread the broccoli in a single layer on the baking tray.
  7. Roast for 18–25 minutes, turning halfway through, until tender with crispy, caramelised edges.
  8. Remove from the oven and drizzle with lemon juice if desired.
  9. Serve immediately.

  • Garlic & Lemon: Add 2 cloves crushed garlic before roasting. Finish with extra lemon zest.
  • Cajun Broccoli: Replace the paprika with 1 tsp Cajun seasoning.
