Roasted Carrots - Oil Free

A simple oil-free roasted carrot recipe with garlic, smoked paprika, and natural caramelised sweetness.

Ingredients

  • 500g carrots, peeled and cut into sticks or rounds
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme, optional
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2–3 tbsp water

Instructions

  1. Preheat the oven to 200°C.
  2. Line a baking tray with baking paper.
  3. Place the carrots in a large bowl.
  4. Sprinkle over the garlic powder, smoked paprika, thyme, salt, and black pepper.
  5. Add the water and toss until the carrots are evenly coated.
  6. Spread the carrots in a single layer on the baking tray.
  7. Roast for 30–40 minutes, turning halfway through, until tender and caramelised around the edges.
  8. Serve immediately.

Optional Flavour Variations

  • Honey & Cinnamon: Add 1 tsp honey and ½ tsp cinnamon before roasting.
  • Herb Roasted: Add 1 tsp mixed dried herbs or rosemary.
  • Spicy Roasted: Add ½ tsp chilli flakes or cayenne pepper.
  • Lemon & Parsley: Finish with fresh parsley and a squeeze of lemon juice after roasting.

Storage

Refrigerate in an airtight container for up to 4 days.

Reheat in the oven or air fryer for best texture.

Kaizen Tip

Roasting at a high temperature allows the natural sugars in the carrots to caramelise, creating a richer flavour without needing any added oil. The darker golden-brown edges are where much of the flavour develops.
