Roasted Cauliflower - Oil Free

A simple oil-free roasted cauliflower recipe with rich seasoning, golden caramelisation, and incredible flavour.

Ingredients

  • 500g cauliflower florets
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp water
  • 1 tbsp fresh lemon juice (optional)

Instructions

  1. Preheat the oven to 220°C.
  2. Line a baking tray with baking paper.
  3. Place the cauliflower florets in a large bowl.
  4. Add the garlic powder, onion powder, smoked paprika, salt, and black pepper.
  5. Drizzle over the water and toss until evenly coated.
  6. Spread the cauliflower in a single layer on the baking tray.
  7. Roast for 25–30 minutes, turning halfway through, until tender and deeply golden around the edges.
  8. Remove from the oven and drizzle with lemon juice if desired.
  9. Serve immediately.

Optional Flavour Variations

  • Garlic & Herb: Add 1 tsp dried mixed herbs or thyme. Finish with fresh parsley.
  • Curry Roasted Cauliflower: Replace the paprika with 1 tsp mild curry powder.
  • Smoky Paprika: Increase smoked paprika to 1 tsp for a richer flavour.
  • Chilli & Lime: Add ½ tsp chilli flakes before roasting and finish with lime juice.

Storage

Store in an airtight container in the refrigerator for up to 4 days.
