Ingredients

  • Lean Protein: Chicken Breast
  • Vegetables: Cherry Tomato, Onions, Baby Spinach & Mushrooms
  • Beans/Grains (Carbs): Oatmeal
  • Healthy Fats: Coconut Oil
  • Spices: Paprika, Ground Cumin, Turmeric, Mixed Herbs, Salt & Pepper

You may use any spice you prefer from the recommended spice list. Season to taste.

Preparation Method

  1. Cut the onions, cherry tomatoes, and mushrooms and set aside.
  2. In a pan with some water, steam the chicken breast until cooked through.
  3. In another pan, fry the onions, tomatoes, and mushrooms in coconut oil until about 80% cooked.
  4. Add turmeric, paprika, ground cumin, mixed herbs, salt, and pepper to the vegetables. Season to taste.
  5. Add water to the pan and then add the oatmeal. Cook until the oats are soft and creamy.
  6. Pull the cooked chicken breast apart into smaller pieces.
  7. Add the chicken breast and baby spinach to the pan.
  8. Mix everything together, serve, and enjoy.
