Ingredients
- Lean Protein: Chicken Breast
- Vegetables: Cherry Tomato, Onions, Baby Spinach & Mushrooms
- Beans/Grains (Carbs): Oatmeal
- Healthy Fats: Coconut Oil
- Spices: Paprika, Ground Cumin, Turmeric, Mixed Herbs, Salt & Pepper
You may use any spice you prefer from the recommended spice list. Season to taste.
Preparation Method
- Cut the onions, cherry tomatoes, and mushrooms and set aside.
- In a pan with some water, steam the chicken breast until cooked through.
- In another pan, fry the onions, tomatoes, and mushrooms in coconut oil until about 80% cooked.
- Add turmeric, paprika, ground cumin, mixed herbs, salt, and pepper to the vegetables. Season to taste.
- Add water to the pan and then add the oatmeal. Cook until the oats are soft and creamy.
- Pull the cooked chicken breast apart into smaller pieces.
- Add the chicken breast and baby spinach to the pan.
- Mix everything together, serve, and enjoy.
