Snoek - Air Fryer

The air fryer helps keep the fish moist while creating lightly caramelised edges, making this a healthy, high-protein meal.

Ingredients

  • 4 snoek portions (approximately 150–200g each)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried mixed herbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of ½ lemon
  • Lemon wedges for serving

Instructions

  1. Pat the snoek portions dry with paper towel.
  2. In a small bowl, combine the paprika, garlic powder, onion powder, mixed herbs, salt, and black pepper.
  3. Sprinkle the seasoning evenly over both sides of the fish.
  4. Squeeze the lemon juice over the snoek and allow it to sit for 5–10 minutes.
  5. Preheat the air fryer to 180°C for 3–5 minutes.
  6. Place the snoek portions in a single layer in the air fryer basket.
  7. Air fry at 180°C for 10–14 minutes, depending on the thickness of the fish.
  8. The snoek is cooked when it flakes easily with a fork and reaches an internal temperature of 63°C.
  9. Serve immediately with fresh lemon wedges.

Kaizen Tip

Snoek can dry out if overcooked. Start checking the fish at the lower end of the cooking range and remove it as soon as it flakes easily. A squeeze of fresh lemon just before serving helps enhance its naturally rich flavour.
